In 1935, Jehanne Benoit opened the first vegetarian restaurant in Montreal. Today, bookstores are filled with vegan cookbooks and cheese alternatives take up many shelves in supermarkets. Is it the product of a trend or the symptom of a deeper shift? Is the relationship of Quebec residents to animals really changing? Can we imagine that one day, Québec will be vegan? Do we have the right strategy?
