All his life, Xavier loved two things; swimming and eating. His two passions go quite well together, since the more you swim, the more you eat!
Retired from the professional open water swimming circuit since 2018, Xavier has made his mark on ultra-marathons. He is the only Canadian in history to have twice won the mythical Traversée Internationale du Lac St-Jean, a sporting event considered among the most difficult in the world. Participating in several championships and world cups, he was often in the world top 5 between 2012 and 2018.
Something unusual in the world of professional sports, Xavier made a transition to a 100% vegan diet in 2012. He considers himself a true food lover and therefore takes great pleasure in discovering a new world of foods and combinations. He was also at the time one of the only high-level Quebec athletes to praise the benefits of a vegan diet and gained good credibility in this world.
By dint of cooking, he develops several recipes and following the ever-growing vegan movement, he is often asked for them. Very curious by nature, he constantly learns about nutrition and developed a new passion: concocting balanced and optimal recipes in order to improve his sports performance.
However, the appeal of decadent recipes is very present and he likes to keep a certain balance by concocting dishes that are as decadent as they are gourmet.
