Pastéis de mandioca (en)

For 2-3 people

Ingredients:

2-3 Cassavas
150 g Tapioca starch (depending of the size of the cassavas, you might need more or less)
1 Red onion
4 Garlic cloves
1/2 Scotch bonnet pepper or Habanero pepper
1 Parsley
Salt
Pepper

Instructions:

1. Start boiling water in a pan.
2. Cut the cassavas in 3 pieces and peel them off with a knife.
3. Put the peeled off pieces in the boiling water for about 10-12min (until the pieces are cooked.
4. Remove the cassava from the pan and cool them off with cold water
5. Put the cassava in a bowl and start removing the roots
6. Mash the cassava into a purée
7. Chop onion, garlic, scotch bonnet pepper and parsley into small pieces.
8. Add them in the bowl with the cassava purée and mix all together.
9. Add tapioca starch gradually until the dough is not too sticky.
10. Start forming small cylinders with the dough.
11. Start boiling oil in a pan (medium heat)
12. When the oil is ready, fry the small cylinders until golden brown
13. When ready, put the pasteis de mandioca on a paper towel to remove the excess of oil.
14. Serve with ketchup or your favourite vegan mayo.
